With the way the country is currently set up, cheaper but nutritious food is the way to go. Having moved out to stay on my own recently I’ve come across some recipes almost by accident in a bid to set up a ‘regular’ meal. My biggest find has been soya chunks. I know, I know, boarding school ruined this meal for most of us but hear me out. My boyfriend taught me how to make these and I instantly fell in love. (Both with him and the dish he’d made). Did you know that this wonderfully cheap meal maker can be a starter as well as steal the whole show? I’ve had soya chunks in broth as well as fried. I’m a Pinterest junkie so I’ve been provided with other manchurian and masala recipes there that make me hate that I left India. Anyhow, if you still don’t like soya chunks I hope this article changes your mind 😉

The type of chunks I’ve always come across in supermarkets and convenient stores are usually shredded for some reason. I can only dream of buying soya chunks that look like vegetarian meatballs like those in the image above. I have no idea if the ones we get are an inside African joke but they’ll do for a meal anyway. Did I mention that soya chunks are perfect for vegans? I read in an article somewhere that they are sometimes called the ‘vegetarian chicken’. I woudn’t know about that but they truly are yummy. And now for my personalized recipe :
What you’ll need:
- A packet of soya chunks (the amount depends on how many people you’re cooking for)
- Tomatoes
- Onion (I make them for my cat too so I don’t put onion but this is up to you)
- Cooking oil (I use vegetable oil but any kind will do,really)
- Salt
- Eggs(very optional esp. for the vegans)
- Spices/Royco
Items you’ll need:
- A frying pan
- A bowl
- A frying spoon/no stick wooden spatula
Step 1. Soak soya chunks in bowl till thoroughly soft. This will take about 10 minutes.
Step 2. Drain water well from soya chunks
Step 3. Heat up oil in frying pan then add soya chunks
Step 4. Fry till they turn an attractive crispy brown then add egg . Fry well together

Step 5. Add salt and royco and continue frying
Step 6. Add tomatoes (and or onion wit oter selected veggies) Continue frying at low heat till tomatoes are thoroughly cooked
Step 7. Proceed to this step if you’d like to make broth. At this point add a little water so that the gravy is created.
Step 8. Let simmer for 5 minutes then serve hot with sadza,rice or pasta.
You can stop at Step 5 or 6 if you’d like to have your soya chunks as a side treat. Make sure they are crispy for the best taste.
